Makes 20-30 cookies
Ingredients:
- 200g of butter
- 1 cup of brown sugar
- 1/2 cup of white sugar
- 2 medium eggs
- 1/2 teaspoon of vanilla
- 1 + 2/3 cups of flour
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1/2 cup of macadamias
- 150g of white chocolate buttons
Method:
- Preheat oven to 180 degrees Celsius
- In a mixer, beat butter until creamy
- Add both sugars gradually until mixture is light and fluffy
- Add the egg and continue beating
- Scrape down the sides of the mixture and add vanilla, beat again
- On a low setting, gradually add the flour
- Scrape down the sides and add the macadamias, make sure all ingredients are mixed
- Line your trays with baking paper and add small balls of dough to the tray
- Bake at 180 for 10-12 minutes or until done - use a skewer to poke through the center - if it comes out clean, your cookies are done.
Chocolate Topping
- Melt white chocolate on a low heat over the stove or in the microwave
- Once it is all melted, use a fork to flick the chocolate in a side to side motion
